
Chocolate Chocolate Goat Cheese Marble Swirl BrowniesBrownie Ingredients:
2 sticks butter (hey…it makes a lot of brownies!)
4 oz. 100% cacao chocolate bar
5 eggs
2 1/2 cups sugar
2 teaspoons vanilla
¼ teaspoon salt
1 1/2 cups flour
4 oz. 60% cacao chocolate bar
Swirl Ingredients:
10 oz. log soft goat cheese
1 egg
1/4 cup sugar
1. Microwave butter and 100% cacao chocolate bar in a microwave safe bowl for 1 minute on high. Stir and microwave for another minute until melted thoroughly. Most recipes would call for a double boiler situation here to melt the chocolate/butter, but I find that a microwave works just fine.
The key is to melt it slowly so that you don’t burn the chocolate. If your microwave is turbo charged, you might want to nuke it for less time.
2. Beat eggs, sugar, and vanilla until light and fluffy.3. Allow the chocolate mixture to cool slightly before beating into egg/sugar mixture.
4. Add flour and salt. Do not over mix.
5. Chop 60% cacao chocolate bar into pieces and fold into batter.6. Whisk softened goat cheese, egg, sugar, and a pinch of salt.
Whisk the mixture so that it is very smooth and creamy.
7. Spray a 9x13 baking dish with cooking spray. Line with parchment and spray it again so that they come out smooth.8. Pour brownie batter into the pan and spread out evenly.
9. Dollop goat cheese mixture onto the brownie batter in two rows.
10. Use a regular knife (not a sharp one) to swirl the goat cheese into the brownie. You can do this by running the knife up and down the pan as though you are slicing the brownies.
11. Bake at 375 for 35-40 minutes. You want to ere on the under-done side here because you want the brownies to be very soft.
12. Let them cool on a baking rack for 10 minutes before slicing.
