Watercress-Cilantro Sauce

I went to Miami about 2 years about with my mom and my sister. I planned the trip at the last minute with a super cheap hotel deal (we staying in a hotel where bad 80s furniture went to die) right in the heart of South Beach. It was hilarious. We had so much fun hopping from bar to beach to great restaurants. One little restaurant that we tried was little off the main drag and it was a sensation. Fresh whole fish and tons of other delicious seafood dishes. We couldn't get enough. To accompany each of their amazing dishes, they served a liquid green sauce that was sweet, spicy, earthy, and amazingly perfect alongside everything they served. I thought it was all cilantro, but when we begged and pleaded for the secret, they told us it was watercress. Watercress is a yummy little green that has a peppery bite to it, which made for a perfect combination with cilantro for a great sauce. It may have a claim to fame in tea sandwiches, but you can find watercress in most any grocery store inexpensively and it really is worth a try. You can serve this sauce along anything to give it some extra sing. Grilled or roasted chicken, fish, or pork. I love it. The last time I served it was alongside the Whole Grilled Rockfish and it was a big hit.Watercress-Cilantro Sauce
1 bunch watercress
1 bunch cilantro
2 limes
1 jalapeno pepper
1 tsp. sugar
1 tsp. salt
1/2 tsp. pepper
1. Wash and dry the watercress and the cilantro and coarsly chop the leaves to get them started for the blender.
2. Seed the jalapeno and slice into strips and then into small pieces. Add to the blender along with the greens.
3. Add the juice of 2 limes to the blender along with salt, pepper, and sugar.
4. Blend until smooth. You may need to add a splash of water if your limes aren't very juicy. You want the sauce to be runny, but still thick with the greens. Just a nice consistency to drizzle over your meat to keep it moist.
