Bacon Wrapped Apple Cider Pork Roast

We were walking around the meat department in Safeway and I was feeling so uninspired. What to make...what to make. Mark, as usual, swept in with a totally brilliant idea. Pork Roast. It just so happened that the pork roasts were on sale, so it was really the perfect suggestion. I marinated it in apple cider and it was a huge hit. Apples and pork are a classic combination and they really work. The sweetness of the cider brings out the sweetness in the pork perfectly. Oh yeah...and the bacon. I wrapped it in bacon for a double porkopolis of amazingness. Wrapping in bacon is really easy and it keeps the pork roast very moist and tender. I made this meal for jus Mark and I, which was kinda nuts. This would be a beautiful showstopper on any holiday table. Well...maybe not Hanukkah :) but you know what I mean.Bacon Wrapped Apple Cider Pork Roast
Ingredients:
2.5-3 lb. pork roast
2 cups apple cider
1 orange
2 onions
2 cloves garlic
1 Tbs. dark brown sugar
5 slices bacon
9 fresh sage leaves
salt and pepper
1. In a large freezer bag, make a marinade with the apple cider, one coarsely chopped onion, and the quartered orange. Sprinkle in 1 Tbs. brown sugar, 1/2 tsp. pepper and 2 tsp. salt.
2. Place the roast into the bag and put in the fridge to marinate for at least an hour, but up to overnight is even better.
3. When you are ready to cook the roast, lay the bacon flat on a butting board and lay the sage leaves around.
4. Set the roast on top of the bacon and sage, sprinkle with salt and pepper, and wrap with bacon.
5. Chop the apples and remaining onion and lay them in the bottom of the roasting pan.
6. Set the roast on top of your apples and onions and sprinkle again with salt and pepper. The bacon is already salty so you don't need too much salt, just a bit.
7. Cover with foil, and roast in a 325 degree oven for an hour and a half (or until the internal temperature reaches 160 degrees). Then remove from the oven and remove the foil.
8. Turn on the broiler and return the uncovered roast to the oven to crisp. Let it broil for about 10-15 minutes until the bacon is as crispy as you like.
9. Let the roast rest for 10 minutes and then slice up and enjoy.
