Garlic and Herb Prime Rib Roast

If you are going to kiss your sweetheart of 5 years on NYE, why not spice up that moment with a pungent, garlic quality? No good reason not to in my book. We were planning to have a very low key New Years: scrumptious dinner at home followed by some mild party hopping with friends. It was a success. We had lots of fun, stayed up til midnight, didn't barf, and made it home in one piece. For the scrumptious dinner part, we head over to Harris Teeter and picked up a glorious prime rib roast. Now, this was my first foray into the world or roasting meats to medium rare and I was super nervous. It is hard to just trust your meat thermometer, but I had no other choice. Mark LOVED that I was so unsure of myself in the kitchen and reveled in the moment. The fact is, it is quite easy to make a prime rib roast, but you just have to trust the meat thermometer and you have to be hands off. If you have a special occasion coming up, I highly recommend this dinner. It is not to be missed.
Garlic and Herb Prime Rib Roast (serves 4)
Ingredients:
4.5-5 lb. prime rib roast
4 cloves garlic
1 tsp. rosemary
1 tsp. thyme
1 tsp. black pepper
3 Tbs. salt
olive oil
4 onions

1. Mix the spices, pepper, and salt together in a bowl.
2. Finley chop and add the garlic to the mix.
3. Bring the rib roast out of the fridge rub all over with your garlic/spice rub. Let the roast it come to room temperature for at least 1 hour prior to cooking.
4. Coarsely chop the onions and place them in the bottom of your roasting rack so that they cook in the juices of the prime rib (these will be a sensational and simple side dish).
5. Drizzle about 2 Tbs. olive oil over the roast. Isn't it so beautiful?!?!
6. Preheat the oven to 500 degrees and place the roast in the hot oven for 20 minutes. Then reduce the temperature to 325 and allow the roast to cook until the internal temperature hits 120 degrees for rare and 130 for medium rare.
7. Remove the roast from the oven and cover with foil for 10-15 minutes so that the juices redistribute.
8. Slice up and enjoy!
