Katie Kennedy's Pumpkin Pear Oatmeal Cookies

My sister has been tearing it up on CSK these days. She made these tasty cookies for our Hanukkah cookie exchange and they were a huge hit.

These cookies are totally cheating because we are using a mix but by adding a few holiday ingredients no one will know its a mix so shhhh don't tell!  The mix calls for 1 stick butter, 1 egg, and 1 tablespoon of water. No offense to betty, if you make the mix as she says the cookies are good. But we are switching up some of the liquid and making it our own. We talked about this recipe being easy to double and that way you could use the whole pear, you would just need 2 packages of the cookie mix.

Katie Kennedy's Pumpkin Pear Oatmeal Cookies
Ingredients
1/2 Bartlett pear
6 oz white chocolate chips
One package oatmeal cookie mix
4 tablespoons of canned pumpkin
4 tablespoons of softened butter
1 egg
1. Peel the pear and dice it finely. (You could also use canned pears which are already peeled)


2. In a mixing bowl, combine the softened butter with the canned pumpkin.
3. Add the cookie mix and egg to your pumpkin butter mixture and mix until dough forms.

4. Gently fold in the pear and white chocolate chips.
5. Using a cookie scoop, drop dough on a cookie sheet (I think silpat works best for these cookies) 2 inches apart
6. Bake 12-15 minutes at 375 degrees or until light golden brown.
Come on.  Who wouldn't want to bake cookies with these three nutty gals?!?!?

  1. Ah I would have loooved to partake in this year's cookie exchange! I remember it a few years back...so much fun :) You guys look so cute in this picture, miss ya..
