Lime Marinated Steak Fajitas

I know a very good looking fella who really loves his steak. His expensive tastes are driving me to the poor house. This quick lime marinade turns a cheap cut of steak into tender, juicy bites of deliciousness. I love all South of the Border food in the summer so this fajita fits the bill. The peppers and onions are sweet and have a perfect little crunch. I also think that creamy avocado pulls it all together. I love that fajitas are basically a whole meal in one wrapper. You've got protein, vegetables, and carbs all wrapped in one. The best part is that this whole meal can be assembled in a matter of minutes so it even works for a weeknight dinner.
Lime Marinated Steak Fajitas
Ingredients (makes 4-5 fajitas which should feed 2-3):
3/4 lb. chuck shoulder steak, 1 inch thick
1 lime
1 Tablespoon paprika
1 Tablespoon salt
1/2 Tablespoon pepper
1 teaspoon cayenne powder (or to taste)
3 medium peppers (red and/or orange)
1 large onion
4 whole wheat tortillas
1/2 cup Monterey jack cheese
1 avocado
Juice from 1/2 lime
1/2 small onion
2 Tablespoons cilantro
Sour cream or plain yogurt

1. Mix the paprika, salt, pepper and cayenne together and rub onto your steak.
2. Put in a shallow dish and squeeze over the juice of a lime. This will be a quick but very effective marinade. Lime juice and salt are able to break down the meat quickly and will make even this very cheap cut of steak tender and juicy. You could certainly use a pricier cut of meat, but I found that this one worked and I'm not knocking a good value.
3. Slice the peppers and onions into strips.
4. Sauté the peppers and onions in olive oil on medium heat for 10 minutes until tender. Don’t add any salt and pepper until about 8 minutes in so that they can get a little browned.
5. Heat a grill pan until very hot and throw on your steak.
6. Cook for 5 minutes and flip. Cook for another 5 minutes and remove steak to a waiting cutting board.
7. Allow to rest for a few minutes before slicing thin.
8. Mark made a super quick guacamole by mashing together 1 avocado, 1/2 small onion, 2 Tablespoons of chopping cilantro, and the juice from half a lime.
9. Assemble fajitas on your tortillas (I warm mine up for 30 seconds in the frying pan) with peppers, steak slices, cheese, guacamole, and sour cream.
10. Dig in.
