Green Tomato Relish

Green tomatoes are very plentiful in summer gardens.  If you have an abundance, this is a fun alternative to Fried Green Tomatoes.  This relish can be served with burgers, dogs, or mixed in with cous cous or rice for a refreshing summer side dish.  There is a sharpness from the vinegar and a mild heat from the jalapeno.  You only cook the relish for a few minutes, so the vegetables retain much of their freshness and crunch.  If you are headed to a BBQ this summer and need something different to bring along, consider making up a batch of this green tomato relish.

Green Tomato Relish
Ingredients:
2 large green tomatoes
1 medium onion
1 jalapeno pepper
1/4 cup sugar
3 Tbs. apple cider vinegar
1 tsp. salt

1.  Dice the tomato into small cubes, finely dice the jalapeno and onion.
2.  In a saucepan, combine all of the ingredients and heat over medium high heat until it begins to simmer.
3.  Allow to cook for 8-10 minutes, until slightly tender.
4.  Allow to cool and use as a condiment for lots of fantastic meals.
