Roasted Brussels Sprouts

Mark loves Brussels Sprouts. They are his favorite vegetable. That is why it is so appropriate that I give you this recipe today. Today is a very special day at Corcoran Street Kitchen...today is Mark's 29th birthday!! I don't know how I got lucky enough to score such a good looking, kind, and thoughtful fella, but I'm not one to question a good thing. Tonight I'm giving Mark a much needed vacation from my cooking at our favorite restaurant, Dino where we will happily feast on the best Italian food in DC. Anyway, back to the sprouts. I think that this is the best way to make them. They are almost like little candies that you can pop all dinner long. Seven-year-old you would be horrified, but you are going about to start loving your Brussels Sprouts. Mom would be so proud.
Roasted Brussels Sprouts
Ingredients (Serves 4):
15 Brussels Sprouts
4 pieces thick cut bacon
salt and pepper
olive oil

1. Slice the sprouts in half and lay them on a foil lined baking sheet.
2. Slice the pieces of bacon into 1/2 inch pieces.
3. Scatter the bacon on the tray so that they are distributed evenly.
4. Drizzle the tray lightly with olive oil and sprinkle with salt and pepper.
5. Bake at 400 degrees for 15-20 minutes until the Brussels Sprouts are caramelized on the outside and tender on the inside.
