Honey Almond Granola with Cherry Craisins

Today is a very special day. It's my dad's birthday! For the special day, I came home to Jersey to celebrate. As we speak, I have his breakfast warming downstairs and I am waiting to give him his gifts that I'm sure he will put in a yard sale pile. Enough about us, more about that Cherry Blossom Run. I couldn't let my very darling friends suffer after the big 10 mile race. They needed big, beautiful brunch spread out before them so that they could eat and relax in peace. Actually, I just really didn't want to have to go down to the mall and watch them. Boooring :) I made lots of fun brunch things and my friends Mairead and Erin made delicious coffee cake and sensational baked french toast. In addition to the unhealthy brunch staples that I laid out, I wanted to have something sensible to eat as well. Enter granola. We've been over homemade granola before, but this one is unique and worth a try. The honey and almonds work well together for a hearty treat that is not too sweet and perfect for everyday breakfast or a special morning treat. I found Cherry flavored craisins so I had to use them (Cherry Blossoms and all) but you could use regular craisins, golden, or regular raisins if you prefer. Happy Birthday Dad!

Honey Almond Granola with Cherry Craisins
Ingredients:
4 cups rolled oats
6 oz. sliced almonds
7 oz. shredded coconut
1 tsp. salt
1/2 cup canola oil
1/3 cup honey
1/4 cup sugar
6 oz. craisins (cherry if you want)

1. In a large bowl, combine the oats, nuts, coconut, sugar, salt, oil, and honey. Mix them together with a spoon or with your hands (even better) until well combined.2. Spread them out over a rimmed baking tray that you sprayed with non-stick spray.
3. Bake in a 375 degree oven. Every 15 minutes or so, you are going to need to take the granola out and toss the granola so that it bakes evenly.


See how it gets more brown at the edges. Shake that up so that it all gets nice and toasted.
4. After about 45 minutes your granola should be quite evenly light brown and toasty. Remove the tray from the oven.
5. Return the granola to a large bowl and add the craisins.
6. Allow the granola to cool and store in an airtight container or large plastic freezer bag.
